Origin & sourcing

Extracted from seeds of the carob tree (Ceratonia siliqua), native to the Mediterranean basin. After carob pods are processed, the seeds are separated and their outer coat removed by acid or heat (roasting) treatment. The deskinned seeds are then split and milled to isolate the pale endosperm, which is roller-milled into a fine powder. A clarified form is produced by dissolving the gum in hot water and precipitating with ethanol or isopropanol. Major producing countries include Portugal, Spain, Italy, and Morocco, which together supply about 75% of global output.

History

The carob tree has been cultivated in the Mediterranean region for approximately 4,000 years, with ancient Egyptians exploiting the adhesive properties of the seeds. Carob seeds served as a jeweler's weight standard in antiquity — their remarkably uniform mass of ~200 mg gave rise to the word 'carat'. Locust bean gum came into wider commercial use as a food hydrocolloid in the 20th century and was assigned the European food-additive code E410.
